I love Coconut everything! So I recently replaced a few recipes ingredients I love with coconut milk. Prior to switching up the recipes with coconut milk, I was using almond milk. Coconut milk just gives it a different flavor and makes it a bit more sweeter.You don’t have to be anti-dairy milk to try this, but once you switch it up, I doubt you will want to go back!
- 2 Eggs
- 2 Cups Flour
- 1 3/4 Cups Coconut Milk
- 1/2 cup Coconut Oil
- 1 Teaspoon Vanilla Extract
- 1 Tablespoon Sugar (I personally use Truvia)
- 4 Teaspoons of Baking Powder
- Dash of salt
- Honey or Maple Syrup to top with (I prefer honey)
- Coconut flakes (optional)
1.) Warm up waffle iron
2.) Mix wet ingredients together in large bowl, set aside.
3.) Sift dry ingredients together, slowly add to wet ingredient bowl.
4.) Let all ingredients sit for about 5 minutes, before cooking.
5.) Using a 1/2 Cup measuring cup, add batter to hot waffle iron. The key to having a crisp waffle, is to allow all steam to rise before removing waffle. Roughly 5 minutes per waffle, on medium-high heat. This batch of Very Coconut Vanilla Waffle batter will make roughly 8 waffles.
6.) Serve hot with honey or maple syrup, top with coconut flakes to make them extra coconutty!
